Crockpot Beef Stew

I found a deal on some beef stew meat at the Teeter so I decided to throw it in the crockpot.  I don’t know if I’ve done this yet, but I’ve got to wax philosophical about the crock pot.  Basically, y’all, if the crock pot is appropriate for cooking what you’re trying to cook (and sometimes if it isn’t), the crock pot is the proverbial shit.  It’s the ultimate lazy or busy person’s cooking tool.  You can turn something on low and cook it for the entire time you’re at work and it’ll be ready for dinner.  For something like beef stew (or any number of other things), the recipe with the crock pot goes something like “dump things in crockpot, turn to low, leave for 8 hours”.  Not to mention, it’s a handy holding device for leftovers that will keep your food in the fridge for days.

Here’s what I put in the crock pot on Saturday

  • beef stew meat (pick your favorite)
  • a red onion, chopped (not too small)
  • russet potato, chopped (ditto)
  • handful of chopped carrots
  • salt/pepper
  • red pepper flakes
  • 2 bouillon cubes – seriously, go buy some of these and keep them in your house
  • 2 cups boiling water

Here’s what it looked like

I cooked it for about 8 hours.  I was really pleased with how it turned out.  The broth that was left over was amazing and had very complex flavors.  I might tone down the red pepper flakes if you’re not a spicy person, but I liked it.  I was pretty generous with the salt and pepper and I think that was appropriate.  I think if I was going to do this again, I might consider some vegetables that would provide color, maybe some peas or something.  But other than that, I was really pleased, and of course, had plenty of leftovers.

Pepper Steak Stir Fry – guest post

I like cooking, but last night I didn’t feel like spending an hour cooking something, so I threw together a little stir fry.
I grabbed a fresh 1/2lb  pack of stir fry cut beef at the grocery store, threw in 1/2 a bag of Birdseye Pepper stir fry (because I love me some peppers and onions), 1/2 can of water chestnuts,  and a few shots of teriyaki sauce, and threw it in the pan. A good serving of instant rice for cooked in the microwave while I finished up the stir fry.

Country style steak

My dad gave me some cubed steak last time I was at home, so I decided to try out country style steak.  Man, this stuff was delicious and really easy (i know it’s shocking that fried beef would be good, but stick with me).

Mix some flour, salt and pepper (you could definitely mix in other spices but I wasn’t feeling too adventurous never having made this before).  Take your cubed steak and roll it in the mixture.  Put some oil in the bottom of a frying pan and put your steak in.  Brown on both sides.

When you’re done cooking, make some gravy.  Gravy is not easy, but the general method is to add some flour to your grease, but not too much and then add milk once the grease has flour in it.  I was told it’s more of an art than a science.  My gravy was kindergarten art.

Definitely try this dish though, it’s really easy.

Putting these babies on the grill shortly.  They were cut by our new local meat market and are marinated in garlic and worcestshire.  More photos later.

chicken and venison with Cole Slaw

So, I made a mountain of cole slaw the other day, trying to eliminate leftover cabbage in my fridge.  While not making for an exciting progression of sides (even though I think I’ve perfected awesome cole slaw), it did give me an opportunity to try making some entrees that I’d been wanting to try.

This is a deer steak that I seared in the pan and then cooked in the oven for about 20 minutes.  It looks more rare in the photo than it actually was…it was more like a medium well.  I can’t really say that I was impressed with how this turned out, thus leading to my next dish.

This is a blackened deer steak (medium well) with cole slaw.  I used the same blackened chicken recipe except with the venison.  I rolled the steak in cajun spice and pan seared, then I put in the oven for 20 mins.  It turned out awesome and the mixture of the slightly gamey venision, the cajun spice, and the balsamic vinegar/crunch of the cole slaw was fantastic.This is barbecued chicken.  I defrosted the chicken, drowned in BBQ sauce and put in the oven for about 20 mins.  I wasn’t crazy about this and would have liked to see the sauce crisp up a little bit.  I think I’ll try putting it under the broiler next time.
