brussel sprouts: cut in half, toss in salt, pepper and enough olive oil to lightly coat them, bake them at 350 on a baking sheet until the side against the baking sheet is browned and crisp. flip and crisp other side if desired - i like the outside leaves crispy.

I highly recommend this recipe.

A couple variations that i have also tried at home:
1. Use Cheddar Cheese
2. Put the chopped green chile into the patties when you make them...assuming you didn't buy a pre made patty.
3. Add Bacon under the melted cheese.

As far as the Jalepenos v. Green Chile question, Green Chile is the way to go for flavor and heat (spice). Most people outside of NM only know of one flavor of Green Chile mild, but it also comes in med, hot and extra-hot. If you want a good quality product anytime of year, Harris Teeter carries a frozen chopped product by Bueno Foods. Im sure if you have space & need you could special order a case of a hotter variety. When they have run their fresh green chile sale (2lbs/$1) I have special ordered two 30lb sacks (roasting, peeling, chopping is labor intensive....but worth it). This past September (NM Green Chile Season), Wegmans hosted a “Get Your Fix” green chile event that was sponsored by the NM Department of Agriculture where you could get fresh roasted green chile, or green chile on pizza, in breads, and a bunch of other things.

Now you made me hungry for a green chile cheeseburger!

I use a spatula to remove and return but I have a problem flipping with the spatula without the contents spilling out. Sorry if that wasn't clear. Thanks for visiting!

SG,

Yes there is a much easier way to deal with this and it takes is form as a spatula. I like a longer version that I can use when cooking fish. I think I bought mine at BB&B. I see your way leading to some burnt digits.

Best!

I love doing this... I have realized that with whatever odd leftovers we have, I can either make a saute or a stew. I throw in chopped asparagus, veggies, beans, potatoes... whatever. I can chunk in meat, and voila. Easy breezy, for whatever taste.

Often I'll actually throw it all in a pan and saute with a tomato-based pasta sauce instead of broth, and throw in with a bit of pasta. It's yummy, and we don't have to throw the food out... or suffer through second-rate leftovers. :)

Cheers!
